I agree about changing the gumbo to chicken and sausage. With that many people, odds are someone or someones are allergic or just don’t eat shellfish. Plus, I think it’s easier to make and cheaper.
And make sure the potato salad is next to the gumbo or everyone knows it’s at the salad bar station. Some people may ignore the salad bar station and wish they had potato salad with their gumbo.

Good call on the potato salad for the gumbo. That and/or sweet potatoes. I'd put it by the gumbo.
Also agree on the concern of keeping the shrimp hot in the cooler. Boiled shrimp don't have to be hot. You could keep the corn and potatoes in the cooler, though.
