The reason they had to bring everybody back 5 years into the future is because at that point in time Thanos was dead. If they brought everybody back 5 years retro Thanos would know they undid his snap.
The plan was to get the stones, undo the snap 5 years in the future, then return the stones back to their timeline so Thanos never figures it out. Obviously that went sideways because of Nebula.

But that Thanos now wouldn’t have the Stones and he’s lost his army at that point, so at best Thanos would have to start his empire from scratch, but everyone would be up Thanos’ arse at this point. Plus how’s he going to leave Earth? I’d say Thanos is fricked if you reset it to the moment Thor hit him with Stormbreaker.
