Kam chancellor was a very big safety and was a pro bowler in the NFL.
Isaiah Simmons the "linebacker" from clemson played much more like a safety on college. They always had him in pass coverage, and he was very effective at it.
In fact he still is better in pass coverage today than shedding blocks a d playing the run.
There is still a place in the game for big safeties. There isn't a place in the game for big, slow safeties.
