We’re consistently a top 25 team based on predictive metrics in the all the computer models. But we don’t have any signature wins over ranked opponents that would register with the human polls. It’s pretty simple.

Objectively that is true. But then you start to look at teams ranked AHEAD of LSU.
Duke - They are 5-3. They literally quit on the Non-conf schedule. Their "best" win is over 4-8 Notre Dame.
Boise St. (coaches poll). They've beaten exactly ONE team with a NET rating under 130
Drake - They are undefeated. They've also played exactly ONE team with winning record all season (6-3 SIU)
So while LSU doesn't have a "great" win as of yet. Their full body of work is better than some ranked ahead of them.
Still, the polls don't matter. Beat Alabama tomorrow and Kentucky on Saturday and the media/coaches will have to begrudgingly acknowledge LSU
