Looking to jump into SW. First timer. Holy hell the amount of content is confusing. I now understand canon vs legends. Should I just stick to Canon?

Most people recommend going with the Thrawn trilogy - i've been meaning to read it but just never gotten around to it

I haven't read any of the Disney preferred canon books.
But if you want to read the legend books, start with the Thrawn Trilogy. If that whets your whistle, you can jump into the New Jedi Order books which covers the Yuuzhan Vong invasion of the Star Wars galaxy.

My thought with sticking with the Canon is where Disney is taking the story. I dont want my mind clouded with theories/stories that will deviate from the Canon.

Lost Stars, a newer canon novel, is a very good read. Gives a very different side and view of the Empire, moreso from the lower ranks within and how they view what's going on, as well as some worldbuilding in the outer rim.

Legends are a better story than what they actually put out as canon. Start with the Truce at Bakura and work your way forward.

This unfortunately is not cannon anymore which is stupid. But I would suggest watch the original trilogy then read these books. Also, the jedi academy series is good too. All of it is legends at this point, but its better than anything they are producing today.
The Tarkin book was not bad. But all the books that are prequals to the current cannon trilogy are trash. Whoever is in charge of SW right now hired a bunch of writers from the CW.
