My wife roasted tomatoes, 2 little onions, peppers( jalapeños, bell peppers, dragon, chili pequins) and garlic in the oven with olive oil. A true hodge lodge from the garden. Peeled the tomatoes and peppers. Put it all in a blender with cumin, salt, pepper, and cilantro. She doesn’t measure anything so you’ll have to play with it depending on your taste.

Our son likes it with a squeeze of lime juice.
