They do. They know that a vast majority of bets are on ole miss so they move the line until it evens out.
They don't have some top-secret inside info that they're hiding from the public in the hopes that the betting will be unbalanced toward one team, and then Vegas will clean up on the other team. That's a sure recipe for bankruptcy.
Vegas books make their money off the vig.
