What causes firewood to pop when burning?

I am burning some dry oak that has been in the barn all summer.
It started popping embers to the point I had to put the fire out. Way more than normal 5-10 ft outside the fire pit

How fast did the oak burn?
I had some branches from my oak tree one time and it never wanted to burn.
I had to eventually throw it away or let Mother Nature take its course and let it rot.
I did see the Lowe’s carries a line of firewood or fire log that has extra popping or crackling sounds as I was shopping this weekend for Christmas lights.
