Processing deer is my least favorite part of hunting.But I do it because no one will do it to my standards.Besides ,if they did it would cost a fortune.It takes me about 20 hours,I get every speck of fat and “silver skin” off.I don’t make sausage,make jerky some years.
Deer sausage doesn’t do it for me,if I kill a wild pig I’ll make sausage with that.
