Also, are we sure that there isn't a cross over in testing for covid/flu?? How does the flu just freaking disappear?

there is scientific evidence of viruses blocking other similar viruses
it makes sense from a biological/survival perspective
or you could just go the easy route and say its a conspiracy

The rapid tests are the antigen tests. The tests that take longer to get back are the PCR tests. Regardless neither of those are antibody tests.
Covid test doesn’t include flu. Flu hasn’t gotten in high gear yet for this season. Masks/social distancing will decrease the flu numbers this year.
