The insulation behind the drywall behind stove/oven is charred, or stained black at least.

That can’t be ideal.

Are you supposed to put something other than drywall and tiles in that area, like a heat barrier of some kind?

Are you sure it isn't mold? What kind of insulation material was back there? Mineral wool insulation is very fire resistant being made from iron and furnace slag and available at home depot. Gypsum board sheet rock is rated as a 1 hour fire wall and many codes call for 2 layers, so a 2 hour firewall, in walls between apartments units. So you could double the sheet rock but just 1 layer of 5/8" Firecode X is all you need.

Stuff the void between the studs with RockWol. It’s fire proof insulation

Might be some kind of soot, I really don't know. The area with the heavy stain, there was a tile missing at the bottom just above the vent area behind the stove.

What is that grill/vent on the very back of your range? A downdraft vent?

Nothing wrong with that if you were missing a tile. Rehang FC Sheetrock and tile and keep cooking.

NO frickING WAY. OP, that stove needs to be check. There is no way you should have any burn marks there. A stove should never do that.

I'm sure you're right. I'll have to find someone that services Thermador. Appreciate your input.

Get that paper backed insulation out and put in RockWol. It’s like $50 for a batt at Home Depot.
