I love overcooked greasy burgers too. If I’m at a place that doesn’t ask about temp, I want some good char on it. A $24 wagu burger...this was perfect. I have had my share of tartare burgers that were just a sloppy mess, the staff just didn’t want to try, so they just brown the outside. This was not the case whatsoever. They actually cooked it, as rare as they’d send it out. They peppered the outside enough to really make it pop, but the sauce mellowed it back out just right.

The local place Fields does a $29 Fork and Knife burger that’s pretty nutty, they bring it out then at the table pour a dark brown Bordlaise sauce all over it. You can’t pick it up at that point, it’s so bait and switch. The burger looked perfect, to temp, then bam, you’re got a sauced...something...I guess a fork and knife burger.

Someone in our party had it Friday too. They over cooked it but it’s a damn good burger

$24 is still insane
