I have always liked Karchners but the last 2 times I bought there, the boudin was so wet it was leaking. It was like rice and gravy in a casing.

That’s discouraging. I’ve never had a bad batch from there. Will keep an eye out for this next time I go.

And Billy’s is basically right across the road. So if one isn’t satisfactory, you don’t have to go far.

Last several times I bought from there I had huge chunks of gristle/fat in the boudin. That being said, Billy's is still better.
