What exactly are you trimming off a tenderloin?

Pretty common to have to trim a whole tenderloin before cutting into steaks.

Whenever I buy one at Sams/Costco I have them trim and cut into steaks. The trimming I grind up and mix with some lean ground beef. Makes a real good burger.
