Yes and no. You’d think that a capital city with a major SEC university in a part of the city that they’re gentrifying would be a successful concept. It’s really bizarre that this thing didn’t work. At least in my opinion.

Those dining halls are cool, but their main audience is a group of young professionals stopping by on their lunch break. Baton Rouge doesn't have a large population of that demographic, and the ones that do live here don't really work in that part of town.

Some thrive, some are ghost towns.
I actually read a good article on them last night, in reference to a few of the NOLA ones.
The Troubling Economics of Food Halls
It is pretty long, but the gist was that the money spent opening the stand and then the large % you have to pay the market, plus increase labor costs due to having to follow their rules as far as operating hours, made it hard to turn a real profit if you're not slammed busy all the time.
I don't think BR had the operating hours issues, though -- they were allowed to make their own hours.
I found that article while looking for one I read a year or so ago that was much better. It was basically outlining all of the external factors you need for a food hall to succeed. I'm not finding it now.
