I don't know what kind of crock pot you have, but if you can't make it hot enough to brown the chicken, then do so in another pot. Season it WELL and then brown it well in a heavy pot, then put it in the crock pot with some onions, potatoes and carrots and mushrooms, and sprigs of celery. Deglaze the other pot with Sprite and pour that in there too. Cover and "crock" it up.

DUDE, YOU COULDNT EFF UP A WET DREAM WITH A CROCK POT. PUT IN A STICK OF BUTTER, SOME CAJUN SEASONING, AND LET IT SIT FOR 8 HOURS AND YOUR MONEY.

A cup of ketchup and a can of coke. Cook until done.
I thicken mine with some corn starch.
Sounds gross. but sort of taste like BBQ and very tender.

Pour margarita mix (with tequila)over chicken breasts, add fresh garlic and cook until done. Shred the chicken, saute some onions and make quesadillas. The kids love it!
A pork tenderloin works well too.

I make it all the time. Chop up one onion and stuff it the cavity. Put the bird in the pot. Add an ounce of terryaki, some crushed garlic, red pepper, an ounce of worcestershire, 1/2 cup of water and cook.
You could add salt but it's already in the terryaki and worster.
If you have other spices in your pantry I'd throw in a dash of celery salt, chili powder, or lemon pepper.
