1/4 C whole grain mustard
1/2 C heavy cream
salt and pepper to taste
Heat over medium heat for 2-3 minutes. Pretty simple.

I've seen the same sauce for crab cakes which is called Pommery mustard sauce. I suggest the OP try it and see whether it's close. That may also help in determining any other ingredients if he thinks something is missing.

Thats what im going to try basically. I think theres a white wine and reduced chicken broth element to it.

Pommeray is actually the brand but it is still sometimes referred to as Pommeray mustard.
It definitely has a unique flavor I think it gets from the use of champagne vinegar. It's also slightly sweet & mildly spiced compared to most traditional whole grain mustards.
Moutarde de Meaux (Pommeray Mustard) was a really popular ingredient in the 90s which is probably why it survives on Houston's menu...
