Bank the coals to one side at about 225 degrees. Use the 3 2 1 method. 3 hours unwrapped, 2 hours wrapped in foil, then finish unwrapped the last hour until done.

It doesn’t hurt to also keep a spray of apple juice laying around. Keep spraying them to keep them moist very 30-45 min or so while they’re unwrapped. The 3-2-1 method is the winner. You can also go 2-2-1 method. Or, cook them in the oven for 2 hours and then throw them on grill afterwards to get the crispness.

What you're doing is "grilling". What you should be doing is "bar-b-quing" or smoking. Ribs need time and lower temps.

I go more by look and feel than by time.

1. Over indirect heat (225-250) until I can touch them and no rub will come off on my finger (usually around 1:30-2hrs).

2. Wrapped in foil with some combo of butter/brown sugar/vinegar sauce until they feel tender enough with a probe between the bones (usually around an hour).

3. Either glaze with sauce, or hit them with more dry rub and throw them back on unwrapped for about 15 minutes to let it set.
