Has to be T-Jim’s fresh pork with green onion. Smoked pork with green onion is great as well.

I don’t believe that counts as Cenla

In cenla the correct answer is Guillory’s in Pineville. I am from the Cajun prairie and we take our smoked pure pork and Tasso seriously. Take my word for it. Guillory’s.

I’ll say it one more time. Guillory’s in Pineville.

Everything else you get around cenla is basically hill shire farm sausage.

I’ll agree that Tjims and Juneau’s are both very good. Juneau’s boudin is the best in cenla IMO.

I totally agree. I've had their boudin many times and it is a very good product.

When I get up that way I will usually buy a couple hundred dollars worth for me and some friends who have tried it and want it whenever I make that trip to see extended family.

Absolutely incorrect.

T-Jim's fresh pork sausage is not smoked, and the way I prefer it is smothered w/onions, while making gravy...

Truth be told, I didn’t really consider Marksville to be cenla. I agree that tjims and Juneau’s in Marksville make good product.

When I hear cenla, I think Ellic, Pineville, woodworth, ball, tioga.

Kartchners

Place is awesome. LA has an embarrassment of riches when it comes to specialty meat stores. Haven't been to them all by any means, but if I had just one to go to, I think Kartchners would be it.

Amazing smoked sausage and boudin.
