Recommendations for a life jacket for 3 year old?

Safety is the priority but also want him to be able to move around just a bit. Taking him out crabbing in a few weeks from the boat. Any OB suggestions out there from EXPERIENCE?

I dont remember name brand but just make sure you have one that goes under crotch and has a grab handle at the top.

Our kids hate the normal vest style but love the Puddle Jumper

We have this one for the pool. I honestly didn't realize it was okay for boats. At least that is what the manufacturer says.
He can wear a standard bulky kids vest during the boat run but once we get where we are going and anchor up he can put on the Puddle Jumper. We run Sabine lake for a bit then head up into the marsh close to Sabine Pass.

How many pounds is he? Both of my kids have been on the boat since 9 months. Gone through a few jackets

Very good plan.
The puddle jumper is a Type III, which is not designed to float your child upright, head above water. It should only be used in close proximity to you and always with undivided attention. If your child falls out of a moving boat and is disoriented and/or unconscious, chances are they will drown before you make it to them.
A Type II, although uncomfortable for kids, is your kids best chance at survival should they fall out of a moving boat or get in an accident. Child Type II's are designed to keep the head above water, have a grab handle, AND most importantly a crotch strap so that they do not slip out.
This is your child's life. Protect it more than your own. Type II for riding, Type III for fishing/sandbar time. Things happen in an instant and often without warning. Dont chance your kids life.

We used this one for a few years. Definitely turns the child face up, out of the water. Only problem is if they go to sleep in the boat, the big collar behind the head was uncomfortable. Other than that, it's a great jacket.
