Sirloin Cap (picanha) at Costco

Noticed yesterday for the first time that Costco had whole prime Sirloin Caps for $5.99 a pound. I picked one up and cut them into Picanha steaks. They are outstanding. Tenderness of a filet and flavor of a ribeye.

I have only seen these pre-cut at my local Costco. Hope they start selling the whole cap soon.

I sliced them about an inch in a half per steak with the grain. You want to slice the steaks with the grain that way when they are done you will be slicing against the grain when you are eating them. I grilled them to medium rare.

Almost all Walmarts have them. This was the cut I tried out for my first real sous vide cook. It was outstanding.

I picked up a couple from Costco Baton Rouge for the first time this weekend. Reverse seared on the grill, great flavor a little tough though, but I guess that's the norm. Wish I had saw the Picanha.

Just did a dry brine with salt, because that was what I was seeing on the video's I watched. What type of marinade would you recommend?

So, let's back up a second. Did you cook whole trip tip roasts or were they cut into steaks when you dry rubbed and cooked them?
