Hire a better caliber of worker than your average fast food place. Personality assessments and such come into play here

CFA generally does not pay more than comparable quick service.

It's a cultural thing. It permeates the pool of people who want to become operators, the people selected, the managers they hire, the training they do, the people drawn to work in the restaurants and the people selected.

CFA was heavily influenced by Ritz Carlton (Truett took my pleasure from RC), and RC's service was centered around ensuring that everyone, dishwashers for example, knew that they were a vital part of the chain and if their work was not done with pride it could invalidate (make/break) the entire experience of a guest. CFA does similarly, and they also beat into the heads of employees how significant a small role can be - for example, a stressed mom with 3 kids coming in for lunch knows she'll get good and reliable service at CFA and that the CFA employees can have a genuine impact on making her day smoother, etc.

And the management team cares and they put these people to work.

If not, they gone. They don't play.

It's easy to cut a crew member without firing.

If they don't do their job they don't get hours.

Eventually they'll move on.
