Who remembers the old way to boil crawfish, with the bags of seasoning just salt onion lemon garlic cayenne pepper. I would like to go back to the old school way. What does the board recommend for one sack of crawfish. I think I'm in the ballpark with 6 bags zaterains 6 onions box and a half of salt small bottle of liquid crab boil half small bottle cayenne pepper. What y'all think do I need to add or take away from.

Any of those pre measured crawfish boils where you just dump the bag in the pot.

box and a half of salt
i have never understood people that pour boxes and boxes of salt in their boil..

That amount of salt likely is perfect for 35 or so quarts of water, by my taste.

That has about the same amount of salt as any of the premixed stuff.

My father did 4 cylinders of salt, one large cayenne jar and a bottle of liquid boil.
We don’t do premixed, but we also don’t make that salty. We add celery seed and lemon zest, along with small onions with the ends cut off.

every mediocre crawfish boil has one thing in common...not enough salt

And im referring to people that put bags of pre mix in then adds a box or 2 of salt.

That's not what OP said he did so you should've clarified you were ranting about something no one mentioned.

So glad crawfish season is upon us again. Been looking forward to 6 threads of folks debating the finer points of boiling, like where to dump your shells and how many cubic feet of salt and/or Chinese red pepper to add to your pot.

quote:too many baws think they are Paul Prudhomme come crawfish season. the best advice to give when someone asks you how to cook crawfish, is to tell them to fill the pot with water and turn on the burner. And 10 frickers will come tell you how to cook crawfish.

I'll hear them out if they are bringing me a beer. I just give them a cup of the boil water and ask them to taste it and make recommendations. That usually shuts the advice down, and unfortunately; the beer fountain.

The good thing about living in Texas is that most don't know how to do it so this isn't a problem.
It's amazing how many times people say mine were the best they've ever had. They're so used to shitty crawfish that anything not over cooked or bland is incredible to them
