Harry's blood had to be forcibly taken so getting blood accidentally spilt would not have worked.

The plan was to portkey Harry take his blood kill him and send him back making it look like he died in the maze therefore no one would know Voldemort was back. It would have been a lot more suspicious if Harry just disappeared in the middle of the year.
