Just had this same issue in my 2014 5.0 f150. Mine was my evaporator core leaking but you could just have low freon from a leak in a less expensive place. Go get it die tested
I was told the fans stayed on as a fail safe because the truck realized something wasnt right with pressures/levels within the AC system

ETA: i also had the radiator coolant O-ring leak. This didnt cause my fans to come on but its worth a check because its simple. Fans will come on if there is low coolant but it has to be pretty low from my understanding

Frick. So fricking simple. It was the coolant level. But now I gotta find the leak...I haven’t noticed anything on the ground where I park.

True, mine was damn near a gallon low
