sweet potato in gumbo is better than potato salad. like you.....i've always had potato salad until i discovered the sweet potato. it doesn't melt in the gumbo and it's all i do now.

See it every day in Ville Platte.
My grandparents have local Fontenot Farms (E&L) sweet potatoes with just about every meal.
