Grew up in Acadia Parish. Sweet potatoes in gumbo regularly from mid ‘60’s (as far back as I can go). Never had/heard of/tried potato salad in or as a side for gumbo until last few years in BR area and it’s ok as a side. For me it’s a no go stirred in and best for seafood gumbo (yeah, no tomatoes).

Sweet potatoes with a gumbo that has a good smoky andouie is best!

Me too and still live there. This thread is the first time I’ve ever heard of sweet potatoes with gumbo. It sounds delicious and I will try it next time I make a gumbo
