Think this would work? Just wouldn’t use the male ethernet cable

You should probably double check your PoE standard being used. This is a passive cable. It won't work with 802.3af/t, which your camera almost certainly isn't, but you should at least check first.
Passive PoE is often anywhere from 24v/0.5a to 48v/1a. It doesn't look like your cable had any 'active' component to it, but I'd at least check the eBay link and confirm that it's not INcompatible with any of those.
I'd hate to fry a camera with a silly little cable. And you probably won't. But it's at least worth taking a little look at first.

ETA: 'active' PoE is a standard used that allows your device to negotiate the power it is drawing. 'passive' PoE is basically turning the RJ45 switch into a power socket, and the power draw is "dumb," so mismatch can be bad. Again, it doesn't look like there's anything 'active' about this part of your chain, and it would be weird for a camera to use the 802.3xx standard without...data...but it's a weird setup anyway, so I wouldn't put anything past them.
