One limiting factor is tolerance - If I've been super low carb/Keto for more than a few weeks, I can't really handle more than 2-3 drinks without feeling like shite.
This is true. My tolerance decreases and my hangovers are worse. Plus, hydration is a bit more difficult to manage.
buuuut I still drink lol. Vodka and soda for me. Sometimes I'll do a few drops of bitters or peychauds to make it taste different

Spirits with water or soda water are going to be less harmful than alcoholic beverages like daiquiris, sugary mixed drinks, beer and wine. The ladder contains a lot more carbs than just ethanol that your liver has to process. Furthermore spirits are cleaner due to the distillation process. You are drinking all the impurities (in very small amounts) when you drink un-distilled fermentations like beer and wine. Distillation removes the majority of impurities (like methanol, acetone, propanol, butanol, iso-butanol, amyl-alcohols, and other impurities produced by yeast and some bacteria during fermentation).
