From Universal to kayaking/camping/fishing in central Florida

Going to Universal for a few days soon but thought I’d take my kayaks, fishing and camping gear as well (nothing like staying at Hard Rock for a few days to sleeping on the group or cabin for a few days after that).
Can you guys recommend any cool (my son likes science-y stuff too) state parks in central-to-north Florida?

Wekiva River to the St. Johns River. About 12 miles if memory serves. Great clear water

I know the old Silver Springs tourist trap attraction in Ocala has recently (last 5 - 10 years) been demo'd and turned into a state park.
Crystal River is known for drawing in the manatees, but it may be getting late in the year for them, not sure.
The Rainbow River runs clear through Rainbow Springs state park in Dunnellon. You can see a lot of freshwater life there. We did a float dive/snorkel trip there on our way back to Auburn after a dive trip to the Keys about 20 years ago.
