so is it illegal to speak as an employee of LSU, to LSU admins about things directly tied to the university because he is subpoenaed?

This isn't complicated. No, it is not illegal. No one is saying it would be illegal. You're missing the point.
Wade and his lawyers have to be prepared for the POSSIBILITY that the administration will throw him under the bus to save their own skin. So Wade can't give them anything that they could possibly twist and use against him, if they should pursue firing him.
I really, really hope that they won't fire him after this "investigation", but Wade's lawyers can't pretend it isn't a possibility.
