It makes the shrimp look nicer on the plate as well as making them look larger. The shell also adds some flavor.

There are ways to get the flavor of the shell without serving wet dishes with shells still on the shrimp. They don’t even give you a side plate for the shells. It’s like they’re entirely unaware they’re giving you a dish you have to stick your hands into and peel.

Kind of like middle eastern people leave the balls on a butchered goat. It is a sign of freshness, and not frozen from a bag.

No, brother. You are doing it wrong. You squeeze the back side of the tail and that extra meat slides right out.
