My son needs a shop on Monday to replace a
Thermostat in a Nissan Xterra. Canal Boulevard Auto Service is not far from where he is staying. Anyone use them? Other recommendations?
He’ll be staying on General Diaz near Delgado.

Check out Mark's, the service station/mechanic business by Jesuit High School. He's been in business at that location for a few decades now and I bring him the things I don't have the tools to fix or equipment to diagnose the problem.
Reasonably priced by my experience and does good work.
He's located on Carrolton Ave. and Banks St. across from Jesuit's Gym. Call him at 488-0618 and get a ballpark price.
ETA: Depending on the vehicles mileage and if the water pump is located behind the timing chain, it may be prudent to change that out too.
Every 4 cylinder foreign car I've had used that engine configuration had the timing chain located in front of the thermostat and it has to come off to replace the thermostat anyway.

B&G Automotive
A good friend of the family runs the above auto repair shop. Damn good mechanic and will fix whatever you need at a good price. The only thing is, its on Airline, close to the airport in Kenner.
