re: Thai and/or Vietnamese Recipes

If I can remember the recipe, I make panang chicken every now and then.
2-3 chicken breasts
1 can of coconut milk
2 teaspoons of red curry paste
Sliced veggies - I usually use yellow onion, carrots, and bell peppers.
S&P
A little brown sugar and srirrachia to finish it up to taste.
Thai basil
Pan fry the chicken until done in some vegetable oil. Remove and add a little more oil, and saute veggies until almost done and remove from pan. Add coconut milk and curry paste and mix well and cook it until it reduces a little. Add veggies and sliced chicken back to pan, and cook until it's all done. Add salt, pepper, brown sugar, and hot sauce to taste, then finish with some thai basil. Serve over Jasmine rice.
EDIT: This also should have a tablespoon or so of fish sauce. Knew I'd forget something. You can also substitute honey for the brown sugar.

I’ve been looking at recipes like this one. I may try it out this Friday. But I’m going to sub in thighs and coconut oil. No brown sugar and cauliflower “rice”
