That does sound appealing not having to sharpen it all the time and blades are cheep and compact.

The replaceable blade knives are awesome for caping animals out but really struggle cutting meat from bone, popping joints, and even in the gutting process. But they're incredible at caping.
For a general use, I'd get a Benchmade Steep Country with the gut hook. $115 fix blade and it'll cover you in pretty much any game cleaning situation. Blade is a hardened steel that will stay sharp long enough to clean any single big game animal short of probably a moose. I recommend the blaze orange handle so it's easier to find in a gut pile...

The best ergonomic design that I’ve ever used. I love them. I timed myself at 10 minutes to skin, quarter, remove straps and tender loin all without gutting the deer.
