My buddy, an elk slayer, uses a folding utility knife. The same one he uses whilst working at a paper mill.

Yea I know it really doesn't take much...I have been doing it with a little pocket buck knife...well the skinning part. Id really like a gut hook on the end of it. I would also like to have a set for dragging around hunting and not my every day kitchen knives so thats why im interested in the boning knife and the cleaver or something bigger to take the ribs off the backbone with out a saw if need be.

Up here in Alaska there is something very similar that seems to be well liked. I don't recall the name, but I will look it up when I get home and post. It has several inter-changeable blades. I had never used it or heard of it before getting here.

I have one with the carpet hook and a havalon . Makes quick work of pigs and deer. Blades are sharp and cheap.
