Rendered 8 lbs of bacon for roux, smoked all of their chicken. Created several layers of depth to the gumbo. It was quite delicious. Those guys know how to cook.

Man I was pissed!

Have been on stage the last 2 years... didn’t sniff it this year! Had a few good ones when I made the rounds, but man did I taste some terrible gumbo. I didn’t think mine was great.... but compared to many I thought we could’ve been top 3 in the category.

They prolly need to tighten up a couple things for next year. Make it a hard serving time at 12. People were running out early... we served probably 14 gals. Make sure people are making enough gumbo too, some of the pots looked small. We Used all but 27 of the 1000 ct box of spoons. Was insane for about an hour and a half.

Great weather and great time though!
