Disney should hand over the Star Wars video game license to CD Projekt Red or RockStar. This isn't difficult. Those two developers would print money for them.

The two largest opening weekend revenue generators in the history of entertainment are AAA open world single player games.
They're not dead and they aren't going anywhere. I will admit they're horribly expensive to produce, so you're seeing fewer of them just due to the cost, but they're nowhere near dead.
Far Cry series
Assassin's Creed series
Just Cause series
Elder Scrolls series
Watchdogs series
Horizon Zero Dawn
Zelda, Breath of the Wild
Those are all ongoing series.
ETA: How the hell did I leave out the Witcher series and Cyberpunk 2077?

Imagine trying to make Star Wars games with EA execs over your shoulder chiming in:

While I agree, a good open world Star Wars game would print money. I think the main issue, like with the live action series, is money. It would require an insane amount of money put up on the front end. It’s a big gamble for a franchise that doesn’t really need to.
Also factoring In is that they are about to release the next generation of consoles in the next couple years.

I'm not trying to white knight for EA, but big budget titles like God of War are expensive and have to sell very well to make a ton of money.
Once a company has found a formula that works (ie Call of Duty or Assassin's Creed), they're gonna run it into the ground before low sales cause them to cancel the franchise or make changes.
It was much easier for companies to take risks in previous generations because video games didn't have such massive budgets.
