Deer Processing around Lafayette

I'm looking for a good place to bring a deer for processing around the Lafayette area. I'm looking for a place that makes good smoked deer sausage. I find most of the places around Lafayette don't smoke their sausage enough whether deer or plain old pork. I grew up in Oakdale and we bought sausage from Ville Platte, Oberlin, Kinder. I also lived in the Lake Charles area and all the sausage was smoked more than the Lafayette area places I have tried. I also would like some deer breakfast sausage. Please suggest a place for deer sausage and if they have a specialty that is really good suggest it too.

Try out acadiana wild game processing in carencro. I used them last year and they were pretty damn good with a fast turnaround.
I saw the inside where he processed and it seems to be a very clean and new facility.
Edit: if you want a heavy smoke you wont get it there. He may leave it in extra for you, idk.

I want to second Acadian Wild game processing. They just did a Podcasts with Louisiana bow hunter and it is very good. Go check it out.

I like Lagneaux's and Acadian. Really like the fresh and smoked sausage from both. Neither are cheap, but they do very good packaging and labeling.

Nonc Kevs in Rayne makes good sausage. Their burritos are amazing.

Piggly Wiggly in Cecilia makes some great sausage for cheap. Not sure if they smoke but definitely worth checking out. Also packaged well.

FDA has cracked down on everyone that smokes meats as they did years ago because of the carcinogens. So, they smoke them less and add liquid smoke. I was told this from a couple different processors.
With that being said, I use best stop for my smoked sausage and I’m happy with them. Used to do it myself but can’t find the time anymore. I did have some done at Bourques year before last I believe it was and it wasn’t smoked enough to talk about.

I drive from Folsom to Langenaux's (sp?) twice a year for sausage. Their jalapeno and cheese is some of the best I have ever had.

That's complete BS. I own a processing facility and nothing has changed with regards to processing. Only thing the FDA has cracked down on is the commercial distribution of prepared meats for sell to other stores.

Well that it may be, although, any way you slice it no one is smoking their products as much as they used. I was just relaying what I was told as well.

I'm not calling you a liar but sounds like a processor that doesn't make good sausage fed you a line of crap. Why would smoking the sausage for a shorter amount of time make a difference if you know the proper technique for safe handling of meats?

I 2nd best stop. Had several deer processed there last year.
