The one on he left which has a solid wall all the way up to the pot, and has an opening on the side facing the propane tank.

Or

The one on the right which is solid all the way around but has an opening crack all around the top for heat to escape upward apparently?

Neither one because you cant adapt it to any other pot.

It's not an oven, the "heat escape" doesn't mean much of anything. Your cooking heat is coming from direct fire to iron heat, not ambient heat

Don't like either because you are limited to only one pot size for that particular burner. I'd never waste my money on one that wasn't multi functional.

Personally, I'd rather the design with the opening around the top. If for no other reason than it allows heat to escape relatively uniformly around the pot. I doubt that matters much though. Jambalaya is cooked at a pretty low temp when it really matters (after rice is added and top put on).

I have the one on the right, and its great.
Honestly, it doesn't matter between the two.

I’m just not a huge fan of either, they look they’re made to fit only that specific pot. You may want to look into something more versatile that could accommodate several pot sizes.

I can’t get it to work... but I use one of the Heberts Cajun stoves. One of his first designs actually. No relation

Ol boy from Rayne who makes crawfish boats and has a machine shop in town. He made one for a pot he bought back in the day and went from there. I’ve had mine for probably 8-10 yrs I think maybe more. There are kind of pricey, but made out of aluminum and won’t rust.

Lots of knockoffs... you can look him up on FB.

You need to spread out flame evenly and not strongly.
