right now its between an oil finish (linseed oil) or clear polyurethane. I'm leaning poly, but it does make me a little nervous, strictly because of my inexperience with it

Just curious, whats the approximate weight of a slab that size?

I did a kitchen table out of cypress with 3 coats of linseed oil (one applied every 24 hrs). Then I waited 48 hrs and applied polyurethane over top. I think I did 2 coats of poly with a 48 hr dry in between each coat. Finish came out really nice.

The linseed made the grain and colors pop. The poly shined it all up and protected it.
