Is there a place in Baton Rouge one could buy a few lbs. of ground brisket?

I'd say 98% of places will grind it for you if you ask.

Most places will. Trying to find a place I don’t have to buy the entire thing. I may have to but just seeing my options.

Try rouses. Needed 1 lb of Boston butt and the man grabbed a 6lb packaged one and sliced a lb off for me

I tried a ground brisket burger once. Did not care for it.

Brisket can be <$3.50/lb.
I tried it for burgers once, and really liked it. My biggest problem was it falling apart from the fat content. I ground it coarse at home.

This
I do 70% chuck, 30% brisket or short rib. Both are very good. Think short rib might be better.
Stick the cubed beef on a pan in freezer for 20 minutes along with my grinder parts before the grind.

Im not a fan of chuck on burgers...it has, that taste. I like a mix of brisket, short rib, and fatty ribeye.

Not exactly sure what you mean.
I find chuck to have a tender, rich flavor.
