I didn't like that version of it. Jeff Bridges just missed the mark with his heavy drawl and slurred delivery of the dialogue in my opinion. It made watching the movie more of a chore than enjoyment for me just trying to figure out what the hell he was saying. Damn thing needed subtitles.

Meh, Unforgiven is a very good movie and a very good western, but it's not going to make the top 5 for most people who are fans of westerns.
Anyway, as to the OP, top 5 for me would be:

Hmmm I never really thought of NCfOM as a "western", but now that I think about it, it definitely is a modern version of the sheriff vs outlaws western.
Hell or High Water is another good one that would fall into that modern western category.
