Best way to film a vacation?

Looking in to getting a GoPro for an upcoming Maui vacation this december. We will be doing so hiking in the jungle, some swimming, beach time, etc. We've been there before.
Anyway, I'm looking to see what the board's recommendation on making a video of the vacation is? Is GoPro still the best option or are there better cameras that are the same kind of wearable tech? Any idea what kind of storage I should aim for?
I'm hoping to film as much as possible so the wife and I have lots of footage to watch of the kids years down the road.

I recently go into the GoPro world and tried my luck in Tennessee. Main advice I would give you is to buy extra batteries before your trip. I would keep at least 4 fully charged on hand. I also bought a backpack mount that made things a lot easier when we did some hiking. Like the poster said above me, editing is the hard part. If you have long videos, they take forever to transfer to your phone through the app

Have a laptop to transfer footage onto in between shoots.

The single best item that I've ever bought for vacations was a Gopro. I only owned mines since last year but still was able to capture a lot of priceless memories. Prior to that, all other vacations seems "lost". We rarely look back at pictures and when we do, it's not nearly the same as watching videos and recapturing the feelings as if we were back there again.
Any action camera or the likes would work. As mentioned above, editing is the toughest part. The more you do the easier and quicker it gets. Just pick a good editing software and stick to it.

Editing is a PITA. Mines don't come out nearly as streamline. Thanks for sharing. From your other videos, looks like you do a shite load of traveling.
