Never thought I’d making my own taco seasoning. This thread has convinced me.

My wife used to be the same way until I convinced how loaded with salt those things are.

I'd also highly recommend that anyone who hasn't made your own tortillas to give that a shot as well.

It adds a bit of work, but it makes all the difference.

AF08, I have been thinking and looking up recipes to make my own. Do you make them and would you mind sharing?

No problem.

Generally we try to make 6-8 tortillas, so we use about a cup of Masa Harina (can be found at Whole Foods, latin grocery stores, or Amazon), a pinch of salt, 3/4 cup water, and a splash of melted butter.

Mix and let sit for about 20 minutes, then gently roll into balls and press between
the tortilla press lines with a plastic bag. If you don't have a tortilla press, you can press down with a large dish like glass baking casserole. But definitely put the tortilla ball between the plastic bag or you'll have a mess. Also, don't press too hard or it'll crack.

Then it's just as simple as cooking them on either side (about a minute each side or until the edges are brown) and whatever you do, don't use oil or cooking spray.

Final product:

NOTE: Those are approximate measurements. once you get the hang of it and do a batch or two, you can just eyeball it.

That’s great! Thank you! Will work on this over the weekend. Have you tried to freeze or refrigerate dough balls for later use?

We haven't tried freezing them so I'm not sure how they hold up.

However, if you're going to try it, I'd recommend freezing them after you've put them through the tortilla press, maybe stacked with some wax paper between each to prevent sticking. Making the dough and rolling it into balls is the easy and quick part so freezing at that stage wouldn't save you much time.
