I know there's some contention but I've always understood Banana's Foster to have come from Commander's.
I saw a story recently that the Brennan family had some interest in the banana companies, so it was a natural. Named after a regular customer (that may have also been involved in bananas).

It was named after the Chief of Police and they were throwing him a party and wanted a brand new desert to unveil. There was a shite ton of bananas sitting in port that needed to be eaten and so they created the Banana's Foster.
ETA: I'm wrong. It was named after Richard Foster who was the chairman of the New Orleans Crime Commission
