Wife got a 32 oz bag of Cauliflower Rice at Costco. I boiled 1/2 the bag for 8 or so minutes.... pressed all the water out in a towel (as u suggested). Dumped into a bowl w 2 eggs, little (maybe 1/4 cup) parmesean, shredded colby jack (maybe 1/4 cup - all the fresh mozz I had needed to go on pizzas - we had some fresh shredded colby jack n fridge so I used it), some italian seasoning.... mixed really well and poured onto a bakin pan in a circle... “patted” it to about 1/4 inch (was the size of a regular paper plate).
Baked 425 for 40 minutes. ** Only change I will make is to either grease the pan or cook less... it kinda stuck... i used a spatula to scrape off and keep intact... worked fine, but will adjust a little.
Pulled from the oven and topped between the pizzas I was grillin.... then baked for 5 min, broiled for 1.
Excellent replacement for pizza dough and I will absolutely do again. Even my 10 year old said he could do that as a pizza.
