Ok I am watching this now. They boiled first and then pour stuff over the crawfish afterwards,

Why not just do a dip sauce. I don’t see what they are doing getting through the shell.

I just realized I pass by Crawfish and Noodle on Tuesdays for work. I will have to pop in and check out the garlic butter tossed crawfish

There is not much penetration for the sauce on the outside. The transfer happens with your hands. It is similar to Singapore chili crab (one of my favorites)

First,

New Orleans is creole not cajun

Second,

They get mostly spillway crawfish in New Orleans


Third,

Viet Crawfish would be good if they had bigger, better crawfish from swla


Fourth,

He’s eating crawfish made by a guy off bourbon street....for other service industry people (not from New Orleans) who just like the idea of eating crawfish.

Fifth,

New Orleans doesn’t do crawfish right. Gotta go between breaux Bridge and Houston. Aka everything West the the atchafalaya

I agree with that. It's by no means the best pizza there is, but a thin crust with pepperoni and Parmesan is solid for what you can get brought to your house in Baton Rouge.

In Baton Rouge, or Prairieville Industry grill serves Viet Cajun Crawfish with garlic butter, not bad, but not great. They are seasoned well unlike Houston.

Just watched his show on Houton and Nola. He is such a condescending a-hole. That moment in the crawfish episode where he tried to force his viewpoint on the Vietnamese fisherman then acted like he was going to cry because he didnt convince him that he needed to have the same opinion as David Chang made me sick. Same for him trying to force the old man to not put ice in his pot. But why the frick does every media outlet have to be a political shite fest where someone from up north looks down their nose on the opinion of others.

The shite he ate in Houston looked nasty and what he he in China looked good. I wouldnt mind tasting that with Louisiana crawfish.

BTW Tasty Casian existed in BR and didnt last. Pretty sure it existed before those places in Houston.

I'm surprised nobody has mentioned his bashing of putting ice in a boil technique...he was giving the Vietnamese owner in New Orleans the business about using ice to cool down the boil...says it does absolutely nothing and it's silly...the Vietnamese owner fired back and said he'd been boiling seafood in New Orleans for 30 years and promises it absolutely does do something.
