Hey Team.

Hey wes. I have a few things to wrap up at work then I'll join you.

I am going to cook a bone in prime rib on New Year's Day like you did. Smoke to 125, then sear on a hot grill, right? What temp was your smoker?

You got it Kim. Kept the smoker between 275-300 because I was in a pinch for time and don’t have the best control over the offset, if you have enough time 225-250 would be ideal.

Kim I smoked a bone in PR on Christmas at 225. It was a 17lb roast and took about 4 hours to get to 125 when I pulled it. I heated up my gas grill white hot about 30 minutes before I pulled and seared it on all sides for about 45 secs. Came out really nice.

I dry brined for 24 hours in advance and really sings.

Yes. I don't care what they say. American beers are the best.

In between matches at my son's wrestling tournament. Have a break and eating lunch. Looked for a taproom or brewery nearby. Found a brewery 15 minutes away. It'll do.

FBD - Cosmic Coldbrew w/maple cream. Very good. Very coffee foward stout with a hint of maple. Very smooth.

ETA: Pork nachos are outstanding at this place. House smoked pork, chipotle crema, house queso, and other shite...

NBD is a Hoppy New Years. This is a very nice, bright, and hoppy traditional IPA. Very nice. Tastes like a derivative of Sticky Hands.

I found out that a 1/6 barrel of Sticky hands is $80.

This is the "refill" price, so I don't know if that makes a difference. You have to bring your own keg in and they fill it for $80.

Since a 1/6 barrel is approximately 41 pints, you are looking at over 5 bucks a pint. At $80, you are looking at less than 2 bucks a pint. Sticky Hands is 8.1% ABV. Thats a fair deal...

Going out to celebrate the wife and I’s Anniversary so my fbd will probably be cocktails with dinner. Hopefully I’ll find some post dinner beers somewhere
