She's better off going through Atlanta than up past Chattanooga, through Knoxville and then over I-40. There's a load of snow on the Smokey Mountains down (at the least to 5000') and a lot of I-40 is in the shade (of the mountains) so any melted water there will freeze.
At least going the eastern route, it only gets altitude at the SC/NC line.

At least take water and several blankets in the car, just in case.

There is no snow here on I 40 in Knoxville, go I 40 to I 81 then take I 26 via Johnson City to Asheville if you are worried about the roads through the mountains past Cocke County, TN. That’s when you start hitting the switchbacks.
